Gluten-free Vegan Giant Sausage Roll

(serves 4-6 people)

Ingredients:
110g walnuts
250g cooked brown rice
160g chickpeas
110g flaked buckwheat
1⁄2 teaspoon sage
1⁄4 teaspoon onion powder
1⁄4 teaspoon mixed herbs
2 tablespoons gluten-free tamari
1 tablespoon English mustard
1 tablespoon peanut butter
1 box of gluten-free Jusrol puff pastry

Directions:
1. Line a baking sheet with parchment paper, spray with non-stick spray and set aside.
Chop walnuts and flaked buckwheat into fine bits with a food processor. Scrape into large bowl.
2. Chop brown rice and chickpeas in food processor until mixture forms a coarse mash. Add this to the mixing bowl.
3. Mix spices, tamari, mustard and peanut butter in a measuring jug then add to the mixing bowl.
4. Knead ingredients until they hold a large sausage shape.
5. Unfold the puff pastry and arrange the large sausage down the middle.
6. Fold the short ends of the pastry over the loaf, then fold up the long edges.
7. Place the giant sausage roll seam-side down on the prepared baking sheet.
8. Bake at 200C for 25-30 minutes. The crust should be puffed and golden and the inside heated through.
