Gluten-free vegan fluffy pancakes


  • 600 g gluten-free self-raising flour
  • 1 Tablespoon baking powder
  • Pinch of sea salt
  • 8 Tablespoons caster sugar
  • 1 teaspoon vanilla extract
  • 780 mililitres almond milk
  • Oil for frying
  • Fruit and/or syrup for topping


  1. In a large mixing bowl combine
    1. self-raising flour
    2. baking powder
    3. salt
    4. caster sugar
  2. Add vanilla extract and dairy free milk and whisk well.
  3. Add oil to a frying pan and heat on medium-high.
  4. Spoon a ladle-full of pancake batter into your pan.
  5. Wait for bubbles to form on the surface of your pancake and for the edges of your pancake to look dry.
  6. Flip your pancake and cook through.
  7. Serve with fruit and/or maple syrup.
